COOKWARE

Non-enamelled Cast Iron (Raw & Pre-seasoned)

Constructed from iron, Cast iron cookware is sturdy, distributes heat evenly and is naturally non-stick and non-reactive when seasoned correctly. Its ability to withstand and maintain high temperatures make it perfect for grilling, stewing, baking, roasting, frying and stovetop-to-oven cooking.
Traditional ‘raw’ cast iron requires seasoning (creating a non-stick, protective coating by rubbing oil and heating to a high temperature) where as pre-season cast iron does not.

Care

Seasoning

Seasoning your cast iron cookware keeps it in good condition and helps prevents food from sticking. Some cast iron will come pre-seasoned however, for unseasoned raw cast iron it is recommended you season before using.
– Make sure your cookware is washed and dried thoroughly. Heat slightly to remove all traces of water if necessary.
– Lightly apply cooking oil to the surface (Do not apply to exterior if coated with porcelain enamel).
– Place upside-down in a preheated oven (250OC) for 2 hours.
– Once heated, remove carefully and let cool.
You may season several times (steps 2-4) for better results. Re-seasoning will require less time in the oven.

Cleaning

– Clean with stiff brush and hot water after each use. Do not use soap or other harsh washing detergents and never soak your cast iron cookware.
– Towel dry immediately after washing and apply a small amount of cooking oil to coat cookware while still warm to keep it well seasoned. Never air dry cookware as this can promote rust.
– Store your cookware in a cool, dry place. Prop up lids on any covered items or leave uncovered in storage to promote air flow and prevent moisture collecting and rust forming
IMPORTANT! Never put cast iron in the dishwasher.

Stove top/Oven Suitability

Cast iron cookware is suitable for use on gas, electric, hot plate, ceramic, halogen and Induction stove tops.
All cast iron is designed for slow cooking in the oven. Maximum oven safe temperature will depend on the lid handles of each individual piece. For more information, please refer to your cookware packaging/care sheet or contact us for further details.

Enamelled Cast Iron

Enamelled cast iron offers many of the same benefits of non-enamelled cast iron but without the need for seasoning. Like traditional cast iron, it is made of iron, but with an added layer of enamel to coat the cooking surface. Although well seasoned ‘raw’ cast iron does not usually react to acidic and alkaline foods, enamelled cast iron is better suited for cooking these foods.

Care

Seasoning

Due to the porcelain enamel coating, enameled cast iron does not require seasoning.

For chipped or damaged enamel coating

Please take special care if your cast-iron cookware has a porcelain enamel exterior. This surface is fragile and should be handled with care. In the event that your cookware should become chipped or scratched, you will need to protect the exposed cast-iron from oxidation.

To protect exposed cast-iron area from pitting and rusting:

– Clean and dry thoroughly.
– Apply a small amount of vegetable oil to the exposed surface.
– Remove any excess oil with a paper towel before storing.

Stainless Steel

Stainless steel cookware is durable, resistant to rust and scratching, easy to care for, resist sticking and does not react with alkaline and acidic foods. It is a very versatile material that is perfect for sautéing, searing, braising and cooking liquids. Most stainless steel cookware is reinforced with an aluminium or copper core to help distribute heat evenly and prevent hot-spots.

Care

Cleaning

Stainless steel cookware is safe for use in the dishwasher, however hand washing is strongly recommended to preserve the appearance and prolong the life of your pans.
For best results when cleaning, scrape the interior clean using a wood or plastic scraper. Once cooled, immerse cookware in hot soapy water (do not soak), scrub clean then dry by hand.
A good quality stainless steel cleaner may be used on stainless steel items to preserve hygienic finish.
IMPORTANT! Do NOT use harsh abrasives which will scratch the surface or a detergent that is based on citric acids or contains chlorine bleach. Such products can damage the cookware and can lead to corrosive reactions.

Stove top/Oven Suitability

Stainless steel cookware is suitable for use on gas, electric, hot plate, ceramic, and halogen stove tops. Some stainless steel cookware is also suitable for use on induction stove tops – to find out if your cookware is suitable for induction stove tops, please refer to your cookware packaging/care sheet or contact us for further details.

Not all stainless steel ranges of cookware are safe for the oven. Suitability for the oven will depend on the lid and handles of each individual piece. To find out if your cookware is suitable for the oven, please refer to your cookware packaging/care sheet or contact us for further details.

Aluminium

Aluminium transmits heat evenly and reacts quickly to changes in temperature, allowing the cook more control over what they are cooking. Raw aluminium is a very reactive material – to be able to use it as cookware it must be anodised (a chemical process which hardens the metal and makes it non-reactive) or coated with a non-stick compound.

Most aluminium cookware is suitable for all cooktop and most are safe for induction – to find out if your cookware is suitable for induction stove tops, please refer to your cookware packaging/care sheet or contact us for further details.

Non-stick Coatings

A non-stick pan can be constructed out of the same materials as other types of cookware -such as stainless steel, aluminium and copper with the main difference being that the cooking surface is coated with a non-stick compound. The compound covers the metal on the inside of the pan, making it non-stick, non-reactive and easy to clean. Although non-stick pans are not suitable for all types of cooking, they are perfect for cooking delicate foods that easily stick such as fish, pancakes and eggs.

Glass lids and Bakelite handles

Glass lids and Bakelite handles may vary in oven temperate suitability and care instructions. Please see individual care sheets provided inside the packaging of each item.

Ceramic

Ceramic bakeware is non-reactive, heats up gradually and stays warm even after cooking – making it perfect for cooking dishes such as casseroles and pies. This type of bakeware is made out of clay that has been shaped and fired at a high temperature and finished with an enamel glaze to resist sticking, chips, scratches and stains. Ceramic dishes can come in a number of colours and can feature hand or machine printed patterns, making them attractive pieces to transfer from the oven to the table.

Care

Most ceramic bakeware is safe for use in the dishwasher, however hand washing is recommended to prolong the life if your bakeware.

Silicone
